I Just Had to Share This

I have figured out how to remove the shell from a soft boiled egg WITHOUT removing half of the white part of the egg along with it¹!!

Check out this beautiful specimen from my breakfast this morning:

Gorgeous, isn't it?!

Are you ready for the secret? Here it is: Leave the eggs out on the counter OVERNIGHT² so that they are at room temperature³ when you cook them!

Et Voila! Perfect eggs!


In case you are interested, my soft boiled egg technique is as follows (modified from Nigella Lawson's always fantastic advice):

  • Put room temperature eggs in a pot and fill with enough lukewarm water to cover the eggs by about an inch or so. 
  • Put pot on stove and turn heat to high.
  • Bring to a boil and keep boiling for 45 seconds.
  • Remove from heat and let sit for 8 minutes.
  • Remove eggs and put in another bowl full of cold water.
  • Peel and eat!
UPDATE:

Apparently, this technique works only for store bought eggs and not fresh eggs fresh from the chicken. Boo!! For those of you with chickens (or who eggs directly from people with chickens), have you had success with peeling and, if so, can you share your technique with us?!

¹Actually, I didn't figure anything out...some friends gave me the tip. Thanks, ARS!

²Yes, the overnight part is extremely important. I tried leaving them out for a couple of hours and then cooking them. Didn't work. I also tried using ice water to cool off the eggs after cooking and varying the amount of time in the cold water. Didn't work.

³This obviously assumes that your eggs are refrigerated.

  2. doesn't work with our chicken eggs :(
    we never put them in the fridge & they always stick to the shell. Maybe if our girls would lay older eggs it would work!

    @MB - I am so sad to hear this because (as you know), we were planning on getting chickens as well! I must solve this for ALL eggs!!

  4. Peel away a small hole at one end and blow into the hole. The egg will come flying out quick and easy.

Chickens Are Scarier Than Crows, Didn't You Know?

The garden is in!  If our Scarechicken does its job, we will soon have a nice crop of heirloom tomatoes, onions, hot peppers, green beans, basil, parsley and thyme! Huge thanks to my parents for their help getting the area ready. It was a jungle!

Why Are We Here?

There are three ways to answer this question: Why are we here? (What are you two up to?) For the past few years we have been watching our budget closely, paying off our debt, and saving as much as we can. This has given us the freedom to pursue a dream. What dream, you ask? A random one! While we do not have a definite goal or specific plan, we have developed some guiding principles: Let life rule instead of work. Explore the country and the world. Trade "stuff" for genuine experiences. Create rather than consume. Develop a spirit of volunteerism. Take odd jobs in unfamiliar disciplines to see if there is something we love, but don't yet know we love. Live in the moment. Work for ourselves as much as possible. Dance outside our comfort zones in order to grow. Find a way to stretch the money we have saved for as long as possible.
